***RECIPE, SERVES TWO***
300-400g (.5-.75 lb) fresh sausages
400-500g (.5 lb) potatoes, I like Yukon Gold
1 bunch green onions
1 big shallot (or two smaller ones)
oil
cornstarch
Marmite
mustard
butter
milk
salt
pepper
Cut the potatoes into small chunks and get them boiling in water.
Peel and thinly slice the shallots, then get them cooking in a little oil over medium/medium-low heat, stirring constantly until they are brown and soft, about 5 minutes.
Push the shallots all the way to the side of the pan, and push the pan just off the burner so that they are no longer over direct heat. Put the sausages in the pan and roll them around until they are thoroughly browned, at least 5 minutes.
Deglaze the pan with enough water to give you the quantity of gravy you desire. Stir in big spoonful of Marmite and a little one of mustard. Grind in a bunch of pepper. In a bowl, mix a couple tablespoons of cornstarch with a little water to make a smooth slurry, then drizzle it into the gravy until you get the thickness you want - you might not need all of the slurry. Be sure to stir the gravy constantly as you drizzle, or the slurry will clump.
Simmer the sausages in the gravy until cooked inside, at least 160ºF, 70ºC. Taste the gravy for seasoning, and add salt if it needs it.
While you're waiting, slice up the green onions, being sure to slice very thinly in the white end.
When the potatoes are easily pierced by a fork, drain them. Throw in a big knob of butter, a little splash of milk and pinch of salt. Mash the potatoes, adding more milk if they're too thick. Taste for seasoning and maybe add more salt. Stir in the green onions while the potatoes are still very hot so they cook a little bit.

Quick tip to anyone reading: if marmite is hard to find or prohibitively expensive where you live, Heinz makes a "Savory Gravy" that is basically this. It's a tad mild compared to Adam's, so throw in a half tablespoon mustard for one 12oz can. Perfectly serviceable, easy to find and won't break the bank.

Adam, I found out a way to fast chop fruits and veg. If you can force your arm to tense and shake, use the shaking motion of your hand and arm to vibrate the knife, chopping as you go. I do this since I have severe tremors and spasticity in my arms.

Are a couple of green onions REALLY sufficient to be touted as the "green vegetable" of this dish? Obviously they're green and a vegetable so, like, sure, he's not wrong to call them that. And if anyone was REALLY concerned the same way I was, they could have a salad or roast some vegetables on the side. But the way he says it, to me, sounds like he's saying: "These green onions will provide all the nutrition you need here!" and I'd hate for people to use that to justify eating fewer vegetables than they already do.

well i tried it, and despite being a huge marmite fan, was pretty disappointed in the result. It just doesn't work as well as a regular gravy. Good idea though, and I was excited about it. I also love your content, so please don't take it personally!

The reason they’re called bangers is because during/ after the war, to use less ingredients/ meat they mixed water into the sausage meat so it goes further which then had a tendency to pop and “bang” when cooked in the oven

As a Brit, I totally approve of this cultural appropriation of Anglo-Irish cuisine. Actually, I fear that Marmite is a bit 'in-yer-face', especially in the quantity that Adam uses. Perhaps he should try Marmite's lesser-known cousin, Bovril, which is a beef extract and not yeast extract. However, the color of the gravy looks awesome, and he should be proud.

English guy here, don't be confused with Adam calling sausages "bangers", we call them sausages too. The word banger came about during ration times in England when sausage cases had a lot of water in the meat to bulk it up and as a result when they would be fried the water would expand in the case and explode with a bang, hence bangers. Basically bangers and mash is a cute way to say sausage and mash and it's nothing more than a call back. A banger is also something that's incredibly good when used to describe something, e.g man that song was a banger. Also marmite is terrible.

Great champ, just the way I make it. Don't be afraid of the butter. With enough, you can forget the milk altogether. I use Kerrygold butter as it's already salted, but a bit more salt sprinkled in will generally be needed. A pinch of white pepper can add a little kick to it too.

Well, start with the sausages and add the onions right in time they need before doing the Marmite part and you‘re not endangered to burn those onions. You won’t even need any fat beforehand bc there‘s enough from the sausages. And btw, why should there be more roasted parts if taking two small, instead of one long sausage (if the total length is the same)?? Four sausage ends that will never touch the surface of the pan instead of two will deliver more roasted sausage parts?

so i used beef better-than-bouillon in lieu of marmite & replaced the water with an entire can of guinness and frankly? EXCELLENT decision. pretty intense gravy on its own but BEAUTIFUL on the bangers & champ

This was a weirdly nostalgic one for me. When I was a kid, my mom started going to school nights to get her teaching degree - so two nights a week, my dad would make dinner. Friday was easy (pizza), but the other night, very often, was sausages, instant mashed potatoes, and canned corn. It was cheap, it was well inside his cooking comfort zone, and (a thing I didn't realize until later), it was one of his very favorite dinners AND one of my mom's least favorite. Fast-forward four decades or so, and I just made this. I think it's already one of my favorite quick dinners, but it's very much NOT one of my girlfriend's - which is a nice continuity, I think. I was skeptical when the Marmite went in. Yeah, yeah, glutamates, umami, flavor bomb, layering, etc., I know - it still smelled like an organic chemistry lab failure. But somehow it all worked. (Oscar Wilde said, "The ugly can be beautiful; the pretty, never." Few realize he was talking about Marmite.)
